Director of Operations
Born and raised in Kosovo, Baton Berisha came to London at the age of 15. He first joined Quo Vadis as Commis Waiter and, after just 4 months, was promoted to Commis Sommelier, as a result of his determination and eagerness to learn. His hard work led him to the Harrington Club, where he took on the role of Assistant Manager in 2002. In 2004, Baton moved to the Savoy Grill before joining D&D as Restaurant Manager across three locations: Le Pont de la Tour, Quaglino’s and Sartoria. His desire to further his knowledge of the industry led him to branch out into London’s nightlife, first by joining Taman Gang Restaurant and Nightclub as General Manager, and later the Brompton Brands as Operations Director. Baton then returned to the restaurant scene through The Fat Duck Group as Senior Manager, before making his way to St Martin’s Lane Hotel as Director of Food and Beverage in September 2013. Made aware of the group’s plans to expand, Baton joined The Ivy Collection in November 2014 and launched The Ivy Market Grill in Covent Garden as General Manager. In February 2016, he was promoted to Head of Restaurant Operations for the entire group. Baton currently holds the role of Director of Operations at The Ivy Collection. When Baton isn’t overseeing restaurants, he enjoys climbing, as well as playing football and spending time with friends and family. He also loves discovering new restaurants and makes a point of dining out somewhere new once a week.
